Best Ever Easy Vegetable Beef Soup
A cozy, flavorful soup with tender beef, hearty veggies, and herbs. Easy to make and perfect for any day.
Ingredients:

1½ lbs beef stew meat

2½ Tbsp olive oil

Salt & pepper to taste

1¾ cups yellow onion (1 large)

1¼ cups carrots (3 medium)

1 cup celery (3 stalks)

1½ Tbsp garlic (4 cloves)

8 cups low-sodium beef or chicken broth
-
2 cans (14 oz) diced tomatoes
-
1½ tsp dried basil
-
1 tsp dried oregano
-
½ tsp dried thyme
-
1 lb red or yellow potatoes (cubed)

1½ cups green beans (5 oz)

1½ cups frozen corn
-
1 cup frozen peas
-
⅓ cup chopped fresh parsley
Quick Instructions:

Brown beef in batches with olive oil, salt, and pepper. Set aside.

Sauté onion, carrots, and celery; add garlic.

Add broth, tomatoes, herbs, and browned beef. Simmer 30 min.

Add potatoes (and green beans if preferred soft). Simmer 20 min.

Add remaining green beans. Simmer 15 min.

Stir in corn, peas, and parsley. Heat through and serve warm.
